Description
Luxury lodge, part of an established group, based in Kruger National Park is looking for a Sous Chef.
Responsibilities:
- Good all-rounder who can fit into any department in the kitchen
- Runs kitchen in the absence of head chef and also is able to work as a team with the head chef
- Good Teamwork to be promoted as well as the ability to work alone and under difficult conditions as well as pressure
- Ensure the highest health and hygiene standards are maintained within the kitchen and dining areas, at all outside dining venues as well as in the stores, fridges and freezers
- Have full knowledge of cleaning products and use
- Check that fridges and storerooms are clean and orderly at all times
- An understanding of working remotely and be flexible with lack of ingredients.
- Up to date with new dietaries and guest preferences
- Proactive Maintenance
- Control waste management and strive to waste as little as possible as this is the core of our values
- Ensure contact is made with each guest on a daily basis
- Report any malfunctioning equipment immediately
- Keep a rotation of goods going to avoid losing stock by expiry
- Responsible for all food orders, storerooms and fridge and deep freezes in absence of the head chef
Requirements:
- At least 3 years’ experience working in a big kitchen with a big team
- A formal chef qualification
- Have a good verbal understanding and a written knowledge of English
- Understanding of level 1 health and hygiene for food handlers
- Good knowledge of food preparation, knife skills and food service
- Pastry knowledge is essential
- Passion for kitchen management – including all kitchen administration, general hygiene and people management
- Computer literate
