Description

Kendrick Recruitment is seeking a Senior Sous Chef for a luxury lodge based in Hluhluwe. We are looking for someone who has a love of cooking as well as the ability to grow and develop local staff within the area. We are needing someone who is passionate and committed and who understands the demands of Safari lodges and is committed to working with community cooks and developing an exciting lodge menu and experience.

Requirements:

  • Knowledge of current leading food trends and plating styles
  • Experience in training cooks and imparting solid industry skills and standards
  • Managing and Leading a Team at a four-star standard
  • Managing the business end of a kitchen from costing – budgets and reporting
  • Fluent in English with an ability to converse in Zulu is desirable
  • Experience in a safari lodge environment and working in a remote location with limited or more challenging supply chains is essential
  • Excellent knowledge of food safety, storage, health standards, and nutrition

Responsibilities:

  • Adopt company Food Concept and implement menus specific to the lodge style and ethos
  • Implement effective basic operational practices for kitchen hygiene, food handling, safety etc
  • Prepare menu costings and budgets and manage all orders, invoices and cost /procurement controls.
  • Training & upskilling community members through an in-house development program
  • Committing to sustainable environmental practices like lowering plastic, food miles and sourcing local and sustainable produce.
  • Ability to manage events/weddings/ conferences from menu design to budgets and day-to-day organisation.

  • Ability to perform under pressure- but also organised enough to ensure the pressure is averted and/or managed entirely!
