Executive Chef

A Creative, experienced and food loving Executive Chef needed for a well known beachfront property in PE. The successful candidate would be responsible for the overall management of the kitchen. The candidate will also be required to maintain and implement hygiene standards and to take control of stock takes and staff training.

  • KEY OUTPUTS:
  • Responsible for training chefs & implementing kitchen standards.
  • Correct chemicals and sufficient cleaning materials to be in stock at all times
  • Proactive Maintenance
  • Good stock controls and stock rotation
  • Responsible for all food orders, storerooms and fridge and deepfreezes
  • All menu’s need to be costed and kept within the COS, overs need a valid explanation with detail as to why there is an over and solution given on how to correct
  • 5-7 years relevant experience in a formal Restaurant / Hotel 4/5star.
  • Strong personality that can think on their feet and work under pressure.
  • Well-spoken and presented individual.
  • Leader with good management skills
  • Creative with an eye for detail
  • Administrations skills and must be highly organised
  • Grade 12.
  • Formal cooking degree/diploma preferable.
  • Experience in running large volume properties
  • Able to work under pressure
  • Experience in creating, costing and maintaining of recipes.
  • Strong general knowledge of food and kitchen procedures
