Upmarket Asian contemporary restaurant serving high end food, events, weddings and catering are seeking an experienced Executive Chef to lead the team
• Total quality control regarding the food
• Serving up to 350 people daily under immense pressure & achieving 5 star quality
• Breakfast, Lunch and Dinner Services • Constantly improving and maintaining a 5 Star rating
• Private Dining Menu's, Planning, Cooking & Execution
• Daily Food & Menu Item Preparation
• Customer Relations • Supplier Relations • Supplier & Stock sourcing
• Health & Safety • Relevant HR issues • All kitchen finances, administration & paperwork
• Menu development, recipes & checksheets • All Kitchen operating • New menu creation & implementation menu changes often)
• Leading & management brigade of kitchen staff
• Accurate stock ordering, usage & loss prevention
• Training of staff regarding any menu changes
• Training of staff on all cooking techniques & standard recipes
• Achieving a food cost of 35% monthly • All costings • Business Management
• Experience with Sushi and global sushi trends
